What ways are there to clean dirty Ethereum? Is converting to Zcash and sending it with Z the best way? Do they use shapeshift to avoid exchanges? I'm curious to learn how the bad guys do it

Here's a good way to clean all your dirty laundry:

1.  Buy XMR with your dirty ETH thru Shapeshift or Changelly.
2.  Use xmr.to to get those XMR converted to Bitcoin.

Be warned tho that you won't get the optimal conversion rates for doing this process but it's the price you pay for cleaning off the dirt.
 
xmr.to keeps logs, so no dice. You need to transfer the XMR from wallet 1 to wallet 2, assuming both are offline wallets under your possession. Even then, there are no guarantees.

Yeah, I think that would be enough to hide your tracks.  The only way to connect your connection with the other wallet would be for the authorities to get a hold of your view key.  Plus the use of VPN's and TOR will hide your tracks with xmr.to enough that the authorities will have a hard time finding out who's who.

The people who are caught using the darknet for illegal stuff are the ones who fail to hide their tracks well.  VPN + TOR + PGP is a must if you want to remain anonymous.

You can do this on decentralised exchange, so there is no third party which can show all transactions on demand. Simple mixing can be done and on Polo and Bittrex but never trust to third parties. But best ways are anonimus coins.

I don't see any ETH mixer running for now but one thing I know here is to used the exchanger site and convert it to other altcoins  and then try to convert it back to ETH so that your coins well be cleaned, And wondring on why their are no people buildings some eth mixer yet? does they doesn't think that its profitable if they build it?

Yes shapeshift can't handle large sum of ethereum and also their fee structure really sucks. Its better to deposit any ethereum in some reputable exchange platform and than withdraw it to new ETH address mulitiple times or even one time could be enough to get cleaner ETH. Another way could be investing in ETH based ICO, deposit with one eth address and get token in new ETH address, sell them when they will be listed for some profit.

In all the instances of people stealing some coins that I've heard of, they've all used exchanges to convert to something else. They seem to plan it all out ahead of time so they can get in and out as fast as possible so they can lower the risk of getting shut down at the exchange.

Yes, and specially because it can be hard or impossible to trace once out of the exchange's wallets. I doubt that if the thief uses a different address to send the coins/tokens out of the exchange that there will be a chain linking the entry address and the exit address. I believe it all goes to some pool of wallets there.
Doesn't matter if all the coins end up in one wallet or not, you can see the deposit and withdraw addresses you used. i.e. there's a record of it. If I remember correctly the last one I heard about they sold whatever coin it was they had stolen for Monero and transfered that out. After that I think you can just send the coins to some other address and now no one can see it.

Probably convert into other currencies like Zcash or Monero by using an exchange or converting to BTC and using a bitcoin mixer.
