At the moment I'm very happy with my headless ubuntu cpu mining litecoins with p2pool
Ubunto and debian seem to work nice. Just be careful what drivers you use on your cards. trust me it makes a huge difference.

No, don't even use Ubuntu. Unity is good, but it'll eat your resource (Unity is built in with compiz). But *buntu family like Xubuntu or Lubuntu is fine though.
being brutally honest. Windows is the best the drivers just are not as good on linux.

If you use CPU mining, use Arch Linux, don't even install X, all you need is bitcoind with bash 
I heard Arch Linux was good.
From what I found BAMT seems to be the best, but I'd still like to know what my options are.
