Usually the best coin to mine with GPUs is the most profitable, and if you desire another coin to hold, you can buy with the coins you mined

Most of the time, ETH is the coin which will give you more profits

And I want to say there are a lot of approachs, you can mine to hold some coins you like, you can mine to help secure the network, you can mine on nicehash and be paid in BTC, you can mine fresh new coins before anyone to have more coins etc

Vertcoin (VTC) has a One Click Miner (OCM) that's probably one of the easiest's on-ramps to start GPU mining. Their algo, Verthash, is also pretty gentle on the gpu. So much in fact, that you can actually use the computer as normal and even game while mining.
