Security (number one and vital), stability, full and quick responses to customer queries, good graphs over various timescales (Poloniex has the best I know of with the slide-able timescales). Also a responsive site which updates orders quickly and which isn't a cpu resource-hog.

Thank you, support is a big factor in your use correct? I understand that customers hate feeling ignored.
I've been fortunate to never have needed the help of support myself at any exchange yet, but if I ever did I'd appreciate a full response in a reasonable timescale.  I've read comments about some exchanges not being responsive in this way, and that is very offputting.

Well-appointed Moderators in a chatbox/trollbox can help toward this. I recall recently there was something that didn't seem right at Cryptsy (If I can remember rightly, balances from one of the coins temporarily didn't show) but the chatbox/trollbox Moderator was there to put everyone's concerns to rest.
