Simply explanation
- Amount (BTC) is sum (total) of all BTC is ordered at that price.
- Total (BTC) is sum (total) of all orders at all prices up to that price. You can call Total (BTC) is Accumulated amount (BTC).

Example:
There are 3 prices ordered on the market for buy orders:
- $10000: 1 BTC
- $20000: 3 BTC
- $40000: 5 BTC
1, 3, 5 is Amount (BTC) and the Total (BTC) at $40000 is 9 BTC = 1 + 3 + 5 (BTC). The similar for sell order book.

Hi. I just started using KuCoin, in the order book there's 'Amounts(BTC)' and next to it 'Total(BTC)', not sure what does that say exactly.
