What is the best app mobile to trade p2p (like bisq and localbitcoin). That can I fiat money eur, usd... to buy Bitcoin?

Coinbase is what comes to mind for being the biggest and best app to buy bitcoin with fiat. There you can buy cryptocurrency by using debit card, bank transfer, SEPA transfer, and more.
The op said he’s looking for a p2p exchange and wallet that he can use for buying bitcoins and Coinbase is a not a p2p exchange and wallet. An example of p2p is Paxful and they have an app which carries both an exchange and a wallet. The app is available for both iOS and Android, you should check it out.

LocalBitcoin and Bisq doesn’t have mobile apps, but Bisq has a notification app, I don’t see any need for such people if you’re not going to be able to trade with it. Another p2p is Bitquick but they also don’t have a mobile app. Paxful is the only p2p with a mobile app.

I don't think I would prefer a phone app to conduct trading, but if it is possible to develop a Bisq version on the phone, you may find some interest.
The problem is not the application but rather the maintenance of trading volumes, which is one of the most prominent problems of decentralized platforms, so if you have a marketing skill to maintain high trading volumes, you will definitely succeed.

Good. I'm thinking to build an open source p2p app, to buy and sell crypto between persons, not a company like Coinbase. Without need KYC.

Yes, I have the skills.

You have Paxful[1] as well. Unlike BISQ though, you'll have to verify your identity[2] once your trading volume reaches 1500$.

If you are fine with BNB based dex then you can also use Trust wallet. It supports integrated Binance Dex exchange and Bitcoin-pegged BNB token. You can also buy with fiat but they use Simplex for that so there's a huge fee.

Those two P2P sites you mention above are best as of now no other than that are the best.
For the mobile wallet app if you are going to hold Bitcoin then you should look for a wallet app that you can have full control of your wallet(With Seed or private keys).

I have two options that I know the best for Android Electrum and Mycelium.

For multi-currency wallet you can use Coinomi wallet.

DO keep in mind that a wallet is not actually your wallet unless you have private keys to it, you might be asking what platforms are good to buy bitcoin on - but these are NOT regular wallets, look at them more as "hot wallets", something to keep your usual amount of cryptos you trade and also create a regular wallet (one of which you have access to your Private keys to) or a "cold wallet" where you can store your coins without risk of random loss.

Now for your question, if you're in the US coinbase is a good one as stated above, but do not neglect the piece of advise above, it could save you tons of stress down the line.
