In the adresses panel i have 2 possibilities
1 - Receiving
2 - Change
I use up to now the adress in Receiving .... but what is the use of the adress in "Change" ?

You wont necessarily have the correct amount of coin you require in a given address. The wallet will take the inputs required to approximate the value you want to transfer and the move the extra amount to a change address within your wallet. It's not so different from fiat currency in that respect although the denominations are much more numerous. If you had a $10 bill and wanted to buy a $5 item... you would want change right? Same idea.
