A good choice of Nvidia cards is 1070 and 1070 ti, if you can find them.
With the help of these cards, many coins can be mined, both new ones and already up. They are quite versatile and do not require any modifications and works out of the box, just plug and mine.
From the other side, you can take ati rx570 gpu, which, with proper tuning, has well proven itself in the mining of ether and cryptonight's based coins, like monero or electroneum

Hey Spike, welcome to this great forum. Unfortunately, now is a horrible time to try to buy the components to build a mining rig, mainly due to the sever shortage of good mining GPUs. There are quite simply no good mining GPUs available at any retailers, which means the only ones you will find will be from 3rd party sellers (like ebay) where you would have to pay 2-3x retail prices for them. I would NOT recommend doing that, as tempting as it might be with prices if coins still very high, even after coming about 15% off the recent all time highs over the past 2 days. The best you could probably do with 2k would be to get a rig with either 2 Vega's or 2 1070ti/1080's, but that would hardly be worth it.
Given this, I would suggest maybe investing directly in some coins you like. You mention XP, which is one I've had my eye on for some time but have yet to pull the trigger on. Not sure about mining that or SAGA, but for Electronium, the best GPU by far would be a Vega (56 or 64), as those can hash close to 2,000 on CrytoNite algo. However, as mentioned, good luck finding any of those at a reasonable price. Retailers should be getting new ones in eventually, but you would have to be very diligent to get them before they sell out. Not only that, but it seems like even places like newegg are going to price gouge with the new Vega's as the few that have shown up on their site in past few weeks have been ridiculously priced... like in the $700 range!

Well i've gathered some friends wich also wanted to invest 2k each, so now i can buy something with 6k of value..
I can put it in the datacenter of my work, so i've got free power for the rig.
I was already looking for graphic cards etc, and living in the netherlands,

I'm new to mining, and i'm thinking about buying a mining parts and set it up myself (have done multiple PC's in the past).
I'm not sure though what to buy, I"m interrested in mining coins that are also PoS, so i can mine them in the beginning and start MasterNodes.
I've got lik 2000 / 2500 euro to invest in a mining rig, but i'm not sure what to buy..
Any suggestions what will work the best with coins like:
