i have  a little experience of raspi 2, since the compatibility, i am sure you can use it as your alternate PC.
do u have a 32/64GB micro SD card anyway (it is much more affordable nowadays)? if yes, then try to install the file given by raspberry pi (raspian, noobs, or ubuntu), after that, use your keyboard and mouse for your pi. no dongle needed, it is built in!

I have just an RPi 3 and basically pretty much your basic desktop computer setup..
Any suggestions on what I could do with it, or how I should set it up?

Get a WD PiDrive then run geth on Ubuntu.

You could try and make a hand held terminal, get an outer casing for it and maybe fit it with a variety of gadgets. I've seen mini themometers, barcode scanners, screens, buttons, leds, radio antennas all hooked up to the raspberry pi motherboards. Some thoughts. Software side - getting a local wifi network link. Hardware side - power source is battery, mains connection or something else? So many possibilities
