Basically whatever's cheapest that has the storage capacity needed for your wallets. Staking itself is not an especially intense process.

Lower-power ones might also be preferred since you'll probably be running this system 24/7, and laptops generally have relatively poor cooling systems.

So a micro PC maybe....but need a keyboard mouse and monitor (take some place) :/
