The easier way of checking is just by looking at the orderbook for each respective exchange.
The owner of the exchange can still manipulate the price by buying/selling on his own exchange - but only as a normal user can (only they have obviously lots more coins & fiat).

Just though here - since most trades are settled outside block chain how the heck anyone know if exchange is honest or faking?

It seems that some exchanges may mix fake buy/sell with real buy/sell to manipulate price. Whats the best way to check daily BTC transfers vol via blockchain? Then deduct daily coins mineds and bingo
