I don't think there will be any other project like uni in the future, because this project is the first and only one. It's like asking if there are any projects that can surpass BTC, and I don't think there are.

But I believe there will be projects in the future that can also grab part of the derivatives market.

The success of Serum started mooning when Solana added USDT. But UNI had it all before them. There use to be a lot of DEX before the list given by OP, they were to very successful because during those times, they offer no stablecoin. By this time, a trader will just have to pick which swapping platform to chose but basically its the anonymity that is important for these traders.

DEX derivatives trading is high barried and complicated. It is so difficult for normal users to understand. dYdx has quite a good user base so I think it has the best chance. I know all the projects you listed expect Shield. It seems like a new project.

What about MDEX, Tokenlon, and bancor?

Those are also potentially to be the next uniswap in the future. Mdex daily trade volume already surpassed UNI. Bancor and Tokenion could be the next game changer to bet for another new UNISWAP in the future.

I will believe if the next UNI should be bancor. The daily trade volume was gradually increasing from time to the time.
it's just the matter of time until people will use this.

I do not think that Uniswap success came only through providing with adequate liquidity and decentralized. many people are looking for profit more than decentralization. As long as the network provides the possibility of listing currencies without restrictions while providing enough liquidity and speed to implement orders, people will move to it.
The current specifications apply to BSC and if there is no change in ETH Gas fees, it is unlikely that we will see any solutions.

I also think that opening NFT Marketplace stores might make some of the cash go to these projects.

Probably Injective protocol. I've been following this project and so far they are improving their exchange and mos tof their partnership have been tied on developing more on this kind of business.

Among the list its my bet in this kind of game. But on other blockchain such as BSC fantom, or matic their projects are also good such as cake, spirit swap, and quick swap. These have also potentials.

Heget could be one of the possibilit, it has mature product, it has long-term plan&vision, it has a successful community to back by and support, so i am quite optimistic about him. Injevtive did quite well for a while on Binance but it seems disappear now, i would say low chance for him.
Sheild Dao is one of the new start i have been keep my eyes on it. Several features i could mention about: they are first risk-free deravitives based on their algorithm, they have quite clear vision and decent understanding on how the development of their product in the long term. However , i think their community needs grow bigger soon, they shall quickly build their international communities in the bull markets.
Airdrop could be one of the solution.
