So what happens if folks are not staying up to date on these forks and instead are just holding the coins in a hardware wallet with a long term hold plan...do they miss out on new coins?

They miss the oportunity to sell it asap but they are still valid holders. Sooner or later they realize it and start claiming their coins. For example such people are quite lucky with BCH ( because the price went up significantly ). Myself sold major part of BCH as well as BTG already (dumped 90% of BTG because i do not trust this coin at all).

if you want to receive coin automatically from the new forks try storing your bitcoin in bittrex they supported both forks and there are some other websites who supported the forks too like yobit just wait for their announcement if they are gonna support the fork before depositing your bitcoins on the exchange.

It depends. If ledger decide to support the new forked coin you will be able to to use  it once they update the app. IF not, you would have to extract private keys from your ledger (you have to use the mnemonic phrase and third party service, which is always risky).

FYI: Both BCH and BTG were supported.

i can recieve free BTG in bittrex because i have a small amount in bittrex during the fork, i use that amount for my day trade, yes your correct mate but i would like to suggest to him do not assume the free coins all they have to do place the bitcoin in safe wallet during the for the security.

When there are forks, do I automatically get the new coins (if there are any generated) regardless of where I store the initial coin? There is another BTC fork coming up...can my BTC be on the Nano Ledger S or does it have to be on some other platform for me to get my new coins?
Thanks

Ledger S take time to support forks it’s just support BCH so that safe your bitcoin and never try to have altcoins
