Are you also able to natively- or cross-compile for OSX? It seems that many coins have been failing to get OSX wallets up in time.
unfortunately I do not have a way to compile osx, but on the bright side I do know someone who can.

Not sure if this is the same method, but I know when Unity3D gave me xcode files I just booted up a OS X VM and built it through xcode and submitted it to app store. Could the same process be used here?

Why not use gitian to cross compile on a virtual machine for all target operating systems? It is not hard.

Personally I would hope that somebody launching a coin of their own would have the technical competance to compile a windows binary on their own.  Or at least have dev. on-staff full-time that can do it.  Am I missing something here?

Exactly.

This. For a coin that's going to be actually used for trading and having value, I would hope the core developers behind it know how to do a simple windows build. If they don't, they shouldn't be forking the litecoin github and just changing values to make a new coin.
