If the minimum cap is not hit I think the developer will issue a refund to all the investors because that's what usually happens in ICO.

I am currently mining this on one of my side rigs -- curious -- do we need to transfer the coins out of our account to a token wallet or can we simply leave them in and have access to them on launch?

Withdrawals will start to be completed after the ICO is finished. You will be able to withdraw the tokens to an ethereum wallet. But the tokens are safe on the platform until the launch.
