Aren't they mostly the same? Granted I never really took the time to actually compare dice games from casinos I've played before, but nothing really stuck out as unique or anything like that.
It was however rather confusing to play it the first time I tried it. Freebitco.in had it back then and was where I first tried it, had a bunch of parameters that for a first timer was rather overwhelming.

For the parameter setup, it could be overwhelming at first, but once you got the feel, whether you want it to run automatically or manual, it's really up to you. The learning curve is not that difficult though as we all know how simple a dice game is. And with that, it just to say where is the best die game because every game is the same.
Basically the same but every casino will provide some differences so that players will be able to choose which one suits them best, the differences can be in the display settings as well as the speed of the casino loading and other features that each casino developer will try to give different things, and another thing that is also a consideration for players is the house edge, and casinos implement this differently.
