With 6 high end video cards, I am sure to be way more than 2.1 Ghash... is there some way for me to figure out how many gigahashes I can produce with these 6 cards before buying?

Alright. I found myself a better motherboard, capable of 6 video cards, should be noteworthy! I will not be replacing the cpu though, it's cheap enough at $250.

if you are in an apartment then you are going to hit the limit on a single circuit at some point.  maybe three to five of those rigs at best.

You don't need a HDD.  Just run BAMT off a USB stick.
And 2G of RAM will do.
EDIT:  And if this is just for mining, your CPU is an overkill.  Just run a sempron.

I PLAN on using this case: http://www.overclock.net/forum/newestpost/1144824 and liquid cooling from koolance on top. I'll probably only get 1 monitor and share between comps, am planning on buying/making up to 10 of these rigs.

Am I missing anything?

But you need to know your power cost.  You can easily mine at a lost if your MH/Watt is bad.  More gigs mining at a lost means more losses.

I want to figure out if I can make this more profitable.

I wouldn't mind running 100 rigs x 2 gigahashes per second

Liquid cooling solves most of the first problems you mentioned.

Living in an apartment that pays for your electricity solves the next one.

Given a perfect mining environment where none of the cards go down, cables fry, cards overheat, mobo slags or PSU blows. And you keep it running 24/7/365, your wife never notices that your project room is at 118 degrees in the dead of winter, you stay sane with the sound of all those fans blowing at 100% 24/7.

And that you can afford the electricity, or have a really long extension cord to the neighbor's house to keep it all humming along.

But, yes, around 1.5-1.75 btc per day is about right. Merge Mine it and you might even tweak up past 2 btc.
