The inflation level will be decided by the BNT holders as a part of the governance, so as the Community may see it beneficial to deploy funds to strategic Bancor liquidity pools, oracles and developers.

A lot! For starters:Peg Network has launched PEG Protocol, allowing anyone to create a stable version of any ERC20 token.
Its first use-case is BUSD, a stable version of BNT that could be used in Bancor liquidity pools.
