People who are interested in using mixers usually put large amounts, so assuming that you actually have 2000 BTC in stock, why not put more in escrow because 10 BTC as insurance are really nothing much?
Since there are a lot of competitors, we assume that people will test our services with small amounts. as soon as we gain more trust, we will put 100 (within 2 months).
and for the record, this "escrow" is not free, we're paying % for this service.
So now what's about mixer, can you show us signed message from adresses where you have reserve of 2000 coins? Do this like cryptomixer did it once, they show it to reputable members here. It's better than holding 10 btc in escrow. Also as you said you are going to escrow 100 btc in near future, suggest you to do this on some person, not on one and choose very reputables.
Show reserves to some DT members here and ask them to sign message and confirm that you really hold 2000btc, this will be fair, do this..

We do not need to public our address with 2000+ BTC. once we reach the 10 BTC limit, we will put 100+ BTC in escrow and we will continue to do so until we reach our 2000+ BTC stock.
No one from the current bitcoin mixers providers did the same, we simply guarantee that no one will be scammed, our stock and especially BTC address is our own business especially we do not want to be exposed to hackers. thank you.

You can try to mix 10BTC, after we will mix them for you, we put 100BTC in escrow, you can mix them too, and after 100BTC we will place 500BTC in escrow.

I don't say you are scammer, seems this is your way to prove your trust but escrowing so regularly won't be cheap for you and especially escrowing of 500btc is very hard task, that's big money.
