If it were that easy it would have been done already, to get the anon you are mixing the coins in some way, to mix the coins you are either centralising or creating nodes, which are susceptible to attack or manipulation.

I think you are spot-on. That is why it's almost impossible to develop such functionality correct the first time. Every anonymous coin is using Nodes. The question I think, is how to secure that Node so manipulation and sorcery can be overcome.
