The blocks have been coming incredibly fast due to a large amount of mining power on the coin. The difficulty retarget time is supposed to be 4 hours because each block is supposed to come every 60 seconds ideally. However, this 4 hour time is caused by 240 block retargets. So, the blocks are getting mined exponentially faster than I expected and the difficulty is increasing because of it.

Have you tried adding -s 2 or -s 3 to your miner? I've decreased my stales a bit by lowering the scan time.
