If payment were made off-chain that goes to tell that such transaction is not bitcoin transaction. For any transaction to be secure, such transaction must be added to open ledger confirm by proof of work!

Shopify due to come in the beginning of Autumn, we will see, if we are able to release it sooner, but safety is the number one priority, so no rush here.
At the moment we have the MVP out with the ability to accept BTC, ETH and LTC, more altcoins and fiat conversion to be added at the later stages.
