I have searched and found that spendabit.co provides the way to buy the bike or bicycle with bitcoin.
Thanks for that link.  I checked it out, and most of the bikes were from overstock and I've seen them, but there were some that I hadn't on the other sites.

The e-bike I really want is a Specialized Vado, which is a really slick set of wheels.  I don't think many traditional bicycle shops carry that model, and I'm guessing I'm going to have a very hard time trying to find a retailer selling Specialized bikes and who takes bitcoin.  But I can wait.  I'm still saving up, and these bikes aren't exactly cheap.  I've owned cars that cost less than what some e-bikes are going for.

Fancy.com also accept crypto, and by the looks of things, have a few electric bikes to choose from on there as well. I have never used that site, however, so cannot vouch for it one way or another.
Never heard of fancy.com, but I just visited it and found it confusing as to what it is exactly--but maybe I'll take a closer look in a bit.  Thank you for that suggestion.

I definitely knew overstock.com accepts crypto but never thought to look there for e-bikes.  Perhaps I'll take a look.  I have browsed their site for fountain pens, which I'm a passionate user of and found that they only had a bunch of cheap knockoffs, and the really good ones weren't offered at attractive prices--and I'm not eager to spend bitcoin on pens anyway.

I'm not a good negotiator and don't have great interpersonal skills, so I doubt I'd be able to convince a local bike shop to take bitcoin if they don't normally do so.  My experience with several bike shops in my area has been pretty poor anyway; the employees tend to be gruff and impatient.  Typical New Englanders.

Thanks for replying to my thread, Dr. Leo.

Overstock.com certainly have a few a electric bikes, and last time I ordered from them I could pay in bitcoin (or a selection of other cryptos). I'm not aware of them changing their policies or no longer accepting crypto.

Fancy.com also accept crypto, and by the looks of things, have a few electric bikes to choose from on there as well. I have never used that site, however, so cannot vouch for it one way or another.

I'm not aware of any specialist bike shops which accept crypto though. You could always try inquiring in your local area - you never know, you might be able to convince a small independent retailer to let you pay in bitcoin.

I've been putting aside bitcoin as a means of saving for an electric bicycle, which has become a kind of obsession for me lately--I've never owned one, but I really want to get one.

While I could certainly convert my bitcoin savings into fiat and buy an e-bike from a local shop or online, what I'd really like to do is find a dealer that takes bitcoin.  I've searched the web, but I can't find any.  Some of the sites that list merchants taking bitcoin haven't been updated, and either the merchants no longer exist or they don't take bitcoin anymore.

Does anyone here know of any bicycle dealers that sell e-bikes and take crypto as payment?

Edit:  I don't know if this is the right section, so if it's not maybe a mod can move it or tell me where it should be.
