As long as you agree to a non-refundable deposit of 0.25BTC for non payment with minerjones.... I'd think that was substantial enough.
You get the refund if you don't win.
The OP gets it as part of payment should you win.

Welcome to the forum Interestedbuyer! OP is 100% right here that deposit made to MJ is the most fair and commonly used practice in this case should you wish to continue bidding!

If for some reason a newb (or anybody) isn't able to pay, the item will go to the next highest bidder, or any bidder who matches them. That fair?

The worry becomes shill bidding.  (NO, I'm not accusing anyone or saying that is happening)
I vet newbie bidders and don't allow any non-vetted newbie bids in the final 24 hours.  If you can't find anyone the user has dealt with... you take a significant deposit.  If they win, it goes against the total they owe you.  If they lose, you refund it.  If they win and don't pay... they lose that deposit AND the next highest bidder gets the option to buy.  Just my 2 Sats on this.
