Yes, you can pick any of the three coins, so yes, you could go for the gold one (which I presume most people will). The gold trimmed coins are indeed numbered.

I already have a design #2 and also have to admit that I have not yet used it as wallet. I dont want to ruin the coin. Anyway I might be interested in a gold plated one. I think it is very interesting that most physical coins are almost never used to actually store bitcoin for any purpose.

In theory they should be used for a way to securely store your funds, a cold storage like mechanism. But instead they are generally kept as collectables

It ruins the hologram and leaves VOID all over the place. You do get 3 holograms with each coins so you can re load them with a fresh private key + hologram!
