The problem of this no kyc exchanges, is any hard issue, is too hard too solve .

But for who want stay anonimus ,for some reason, its the best choise . but be careful , are so many excanges offers a easy no kyc excanges tnat are simples scamms .

Hodlhodl and Bisq seems to be good options to cover my needs. The only think would left be to do a basic on chain analytic, to make sure that the funds coming is not tainted, are there any open source tools available for basic check up?

All of those I mentioned above may ask for a basic KYC but it's totally not to store your personal data information.

I would rather choose a decentralized exchange for the fully anonymous exchange, but the disadvantage is there could be a low volume of that exchange which is hard to execute your trade orders.

I'm looking for exchange that does not store any of your personal date and does ask you for KYC. Besides using DEX, what can you add to the list? As well as your personal experience. My current experience.

 - Withing EXODUS wallet (exchange got stuck, they forward me to 3rd party exchange for support)
 - Changelly within ledger live (not clear if they will ask for KYC or not, different info on both webs, waiting on clear reply from support)

Almost all exchange won't let you do any kind of fiat trading without going through KYC. Some exchanges will allow you to trade with some limits imposed without going through KYC, but at some point they might want you to verify yourself and your funds might get frozen. So you always have to be prepared for going through KYC, if you are using centralized exchange. As far as I know, Kraken still allows its users to trade without KYC. So you might try that. Otherwise stick with decentralized exchanges.

If you are looking for a centralized exchange, it seems impossible. Dates can be used as their second database index in addition to transaction numbers. I'm not even sure that p2p exchanges will discard your transaction date records. After all, dates are quite helpful in terms of customer complaints.

I think OP wanted to say an exchange that doesn't require KYC and  doesn't save customer's data. It's a norm to see tradeoffs like these in software products and even services. It's a good thing there's plenty of crypto exchanges that doesn't indulge in such but I'll be weary of not-so-strict exchanges like Kucoin and others. Primarily because - they might be a target for regulatory bodies and also because they might have theirown diwnsidesto be able to offer such benefits to their customers.

^ Probably you are talking about a wallet but at the same as an exchange right or a quick swap of your coin that did not ask KYC, right?
Just Coinomi, you can swap your coin that did not require KYC but remind that it has terrible fees but it surely does not ask for any KYC procedures and they are using Changelly third party exchange.
However, if I am wrong and you are looking for an exchange, do the suggestion above and my pick is also Kucoin.

I’m about to say Kucoin is the best exchange that didn’t ask for KYC as mandatory but having that no save date options is not really possible because even DEX have that details on every transactions. If you want to remain anonymous even with that date, I guess Mixer is the best option for that.

i don't know the motive of the OP why he is asking about the no save date because each transaction will be reflected on the blockchain and you can't change or hide the date of your tx. i do agree that the first exchange that came up to my mind without kyc is kucoin. they have better liquidity than other small-medium exchanges without kyc. but traders should keep up with their updates because sooner or later, they may require compulsory kyc also. so far, i haven't encountered any prob using this exchange.

Aside from the exchanges mentioned, kucoin I think likely the good choice that you can have.
KuCoin has KYC but it is not too strict like the other exchanges and KuCoin is a good exchange that you can use for additional exchange. Atomic wallet and Exodus is good wallet but I still prefer using Trust wallet. But all personal wallets that we know will have advantages and disadvantages so we need to select with care. I prefer to use Kucoin to trade because KuCoin has many coins and tokens like the other exchange, although KuCoin is not too popular like them.
Just like Binance, they're not strict and they have account limitation if you're not verified. Anyone can still trade there without having the need to verify the KYC and that's why they're the ones that I've thought of without any KYC needed.
I've just mentioned and compared the two multi wallets because they have a feature as an integrated exchange. I know trust wallet has the same but it's more with the BSC network.

When Binance turns out into a heavy restriction, those traders who were afraid to comply with KYC transfer into Kucoin which doesn't have a full restriction.
So I think if you are looking centralized exchange that doesn't have KYC, that's impossible because centralized means they are following government protocols which we know government always want to regulate all financial matters.

I suggest you to use decentralized exchange if you are looking for the no KYC exchange, I agree above, it should be Bisq and Hodlhodl.

Not really sure if I know a exchange site that does not ask KYC but in the Ledger I think they will not ask for KYC but the fee is really high, I know that because I test it out before on my Ledger and I don't think it is good. Looking online I think Changelly do ask KYC so I think it's not a safe way to exchange your coin.
