Matchtracker's, on the right, are nice as they show the ball moving. Video streams seem too lag too far behind.
this Matchtracker in my opinion doesn't help at all, the person can't know to what extent any team is strong or not on the field, I'll give a concrete example:
Liverpool Vs Real Madrid (Champions League Final Match)
pre-match odds:
Liverpool = @2.00
Real Madrid = @3.60
Looking at the data anyone would say liverpool were the strongest but watching the game live people could clearly see that liverpool attacks were not dangerous and real madrid attacks were dangerous and they could clearly see that betting on real madrid was the best choice, but if people were watching Matchtracker they would never know what I said, because in Matchtracker whenever a team is close to the other team's goal they consider attack dangerous even if it is not even a dangerous attack. Watching the game live offers more detail and allows for good decision making

I think there's only a limitations on what sporting event it could host in a sportsbook and not all can be stream. Stake is your best bet here but would not expect that much considering it isn't fix as far as I know. What could be the reason you wanted a live stream?
maybe it's because OP has already realized that watching the games live allows you to make better decisions about which team to bet on and which market to bet on. in a live game it is possible to get a lot of relevant data and then place a bet
