Oh added fun fact I learned last week about lot 4.
So because of the nature of the landscape and the occasionally absurd winters. Talking 2m overnight. The bees change their travel patterns vastly throughout the year in order to collect nectar. Different nectar sources means different product. They DO NOT homogenize the mixtures. Depending on what time of year the harvest was from, you'll get a slightly differing flavor. my favorite is the first spring harvest as more sugar is produced in cold grown plants. Cheers!
