Guys - I implemented vardiff support for ETH and also some new nodes. Here is latest info:

Static diff 1.5B
eth-us.coinmine.pl:4000 - US
eth-sg.coinmine.pl:4000 - Singapore
eth-eu.coinmine.pl:4000 - Europe
eth.coinmine.pl:4000 - Europe but will be with geo location

Vardiff
eth-us.coinmine.pl:5000 - US
eth-sg.coinmine.pl:5000 - Singapore
eth-eu.coinmine.pl:5000 - Europe
eth.coinmine.pl:5000 - Europe but will be with geo location

I am finishing development for requesting difficulty by miners and for accepting stale shares

provided I have the hardware, what are the advantages of going Vardiff? greater efficiency?

-esm is stratum mode (not each pools use the same stratum mode, it's just a different way of doing the same thing)

I have tried port 3000, 4000, 4001, 5000...not one works

You got -esm wrong and allcoins too (you are mining eth, not a clone of eth)

Does vardiff work with Claymore miner? I can't connect to vardiff ports. Static ports(4000 and 4001) work just fine.

it should work as backend is exactly the same as port 4000 just with vardiff - any error message you can share?
