As a general rule of thumb I would consider the desktop wallet - with password encryption enabled - as safer for large sums of money than the mobile ones - which is not to say that mobile wallets are massively insecure or anything like that, just that due to their nature mobile devices are more prone to theft and/or other problems.

Yes, Gulden is safe to hold on a mobile device.

The safest way to store, totally depends on the security you would personally use. Any mobile device can break, likewise any cold storage device. If you are talking about long-term storage, I would say that you at least work with backups and having your private key stored somewhere safe to.
