Well, "good" is dependent on what you want from a casino. If you mean good in a house edge way than you will have to try to calculate which casinos offer the best house edge.

If you mean good as in entertainment value, than you need to find a casino with bunch of features that makes the games more than what it is at default, things they add to make it more entertaining. To me when I try to select a casino I do not care for any of that, I just care if a casino is trustworthy and won't scam me. That is all I care, play a fair game on a trusted known website. Can't fully answer that question, since I don't really look for other casinos anymore, but I can share how I ended up at the current one I'm playing on.
I think I had discovered Crypto-Games back in 2014 or 2015, after reading about them here on the forum.

Two years is not a small period. Many things can change within two years so if a site runs without any major issues for two years then I will trust those sites for sure. But I prefer to read the feedbacks in a forum instead of any sites because those site reviews may be paid one so we can't trust those ratings. If they provide a good support, quicky payments and fairness can attract many players to the site.

I look at the variety of games on offer first, because I get bored very quickly. I think the only games that really draw my attention was the casinos with games that was unique. A lot of casinos are just offering the same games and then I look at the house edge, to see where my $1 can give me more spins.

A system to verify if a roll or game was legitimate is a top priority for me, among others like support speed, site navigability, speed, and deposit times. I'm okay with registration and all, as I often clear my cookies and I don't remember or copy down those darn login URLs often.

Multiple coins available to be deposited is another one high up on my list of things to look for in an online casino. Should another spam attack happen, I don't want to be paying several dollars to get a transaction processed quickly. Things are much calmer now, but it's good to prepare for the future.

Trust is really hard to achieved so I guessed a popular ones will not waste their effort to make their site popular. Meaning choosing a reputable one will minimize the risks of being scammed*. No assurance that everything will be fine at the end but it's way better to minimize the risks.
