for me there are a couple of things that are important. first of all the gambling site should be legit and honest and be transparent with no shady shenanigans in the background especially in their provably fair system.

then for choosing a site I choose the game first then look what sites are offering this game and then I try to find their topic on bitcointalk or any kind of feedback and read those to decide.

in the end I care so much about the design to be good while being fast and light so it can be run on any device easily.

To choose the best you have to see lot of things like:
-Trust of gamblers/forum trust
-If there is a real provably fair
-A chat is important too
-House edge
-Deposit/withdrawal system, if auto or manual and the time

And so on.. Just some info to choose a good site, then is up to your personal preference (graphic, games, etc)

As far as for my knowledge, all the gambling sites work the same way. There could only be 2 different sites, where 1 keeps the winning chances at median level and 1 at the low level.
