For me all professions have an important work or role in the society, we need engineers to build buildings, we need doctors, nurses to help us for our health, we need  police, soldiers to maintain peace etc., but the most important profession for me is the teachers that educate and build engineers, nurses,police, soldier. We don't have them without teachers.

You are talking about the teacher, that he is the most important. But the foundations of life can be taught by ordinary people.

Healthcare, because that field is where people have to really care about other people. Without good healthcare no one will be able to do well and we all need help from time to time, lets not forget that.

This is like asking which leg of a three legged table is least important.  Removing any of a number of vital jobs would have dire consequences - fortunately their removal would not lead to the collapse of society altogether so we must ask the loss of which would cause the most instability.

We can still learn without teachers, people self educate and homeschool all the time.  Tradesmen could still pass on their trade.
Many would starve without farmers but we can still feed ourselves through home gardening, fishing, hunting, and so on.
The loss of police would lead to widespread crime and havoc but self organization would occur.  The police would lose power but someone else would gain it.
Losing doctors would truly suck.

I am going to go with epidemiologists.  We would be screwed if we lost them.  They stop the spread of so many diseases, for example malaria the other year.  With globalization the rate of disease is more than ever.
At least people know to wash their hands without them.

True I do agrees with teacher considers as the most important work in our society, but one must say that parenting is the most important work in society, parenting is the firs gate for our new generations on how they will see this world. Parenting is important because true education will starts from home.

All of the professions in our society are important , but then I think that teacher have the highest point among them all. For teacher are those you make each person become an educated one, and without them, there will be no Lawyers, Business Managers, and other professionals wo contributes a lot to make Valuable Things for our society or country.
