So what would you do if you had 1 million token supply? How would you list it on Uniswap? Would you start with 100 tokens at $1 which would be $100 eth? Or would you do more or less? Thanks
You must see how much demand for your token. you can't determine how many tokens that must be put into the liquidity pool. You can start with various amounts. It's better to start from the small amounts. Basically, it doesn't matter a lot how many tokens will be locked on the liq pool. Try to talk with yourself. A few percents from the total supply is more than enough.

I don't know exactly how to start determining the unit value of the token, but as far as I understand it will basically depend on your project funding needs. The total supply can be determined according to the needs according to its function (more precisely scalability).

In the end, your token value will last and fluctuate as the project progresses. If you don't have a project underlying the token, the token will be useless and will have no value.

I’m not launching a token, I’m just trying to understand Uniswap and how a startup could launch their token without a ton of ether. It seems the best option would be to start small such as 100 tokens at $1 (assuming small total supply) which would require $100 ether and if it ‘sells out’ then add more and so on. Right or Wrong?

Liquidity must be 1: 1 ratio between token and ETH.
If you mean adding to the allocation of token sales on uniswap, yes it is possible. But to increase the total supply, no. The developer cannot arbitrarily add to the total supply if the token contract says the total supply is limited, it will forever be limited according to the initial issue amount.

But say I put 10,000 of my tokens at $100 ether value total. Couldn’t someone just buy them all up in one foul swoop?
What will be the reason that someone would swoosh and take all of your tokens. If there's some good features your token has, what you're thinking right now is likely to happen.
But if you just want to earn from your token and it has nothing to offer, don't expect a lot. Just saying friend.

Someone could buy your token as long as he was interested in your token and if no one interested to buy your token and there will be no someone that will buy your token. If you are only offering coin without actual product or benefit from your token and no one will never buy your token.

I don’t care about the money but at the same time if I put all my tokens on for say $500 ETH, someone could just buy them all...

Don't put all your tokens, use some fraction. If you create new pool you decide what initial price will be and how many tokens to put it.

What would you recommend? If you had 1 million total supply of tokens? How would you go about listing on Uniswap. Thanks!
Just use some percentages of your token. You must think about the supply that will be enough to be used to provide the liquidity pool on the uniswap.
Do you wanna put them all on uniswap? it sounds shady for me. Dude, you must not be greedy for money. Put what you have thought that's enough.

Any advice for someone wanting to list their new token on Uniswap? It just seems impossible as you need to deposit the same value in ETH, so if I wanted to list 10000 of my tokens at $1 each, I’d need to also deposit $10000 ETH.

Well thats how uniswap works. you provide. liquidity in a pair you wish to be traded. start with a smaller sum
