I am on WeMine and give-me-ltc. Give-me is pretty good but I keep dropping on it. WeMine fees takes me sometime to get to the same level but has better stats.

Anyone will work just fine.

Afair some pools sometimes go down, so it's best to use a miner that will switch to alternative when needed.

give-me-ltc.com

Excellent pool run by an excellent user who frequents the btc-e live chat (aka trollbox) for when you need the help. Servers located around the world for faster ping times too.

You just need a scrypt based miner.
