Ozco.in - simple math - they pay as much or more than the other pools. Also, they are responsive to issues even when your not that nice about it.  They even have PoT for everyone if you like that kinda thing...

Just pick what you want to mine. PPS, DGM, PROP, or WHATEVER then pick the established pool that has the lowest fee.
Ozco, 50BTC, and BTCGuild are my preferences in that order

Personally my favorite pools are Bitminter, Ozcoin and EMC; in that order. Doubt you could go wrong with any of them

I'll be honest when I say I don't quite understand the maths behind it, but all I know is i'ts a non-hoppable payment method where you start a new round (every block), and you retain a portion of the payout from your previous rounds (thru a score system). Each round ends up paying about the same (just like prop), but it's non hoppable, and evens out your payment (per round) compared to PPS. It works quite well in practice, and is very popular.
See this post for a better explanation/comparison of all the payment methods: https://bitcointalksearch.org/topic/m.1146110

I can second that Ozcoin suggestion, I moved over to them a few weeks ago and am very happy with their eustratum servers on PPS. Currently mining at a stable 1180% ( Shocked!!) efficiency with virtually zero stales/rejects. It's a very good setup indeed.

So my normal pool is on its way out it seems. I'm looking for a new pool but, so far, haven't found a great one. I tried deepbit but the stale shares are about 5% per GPU. My current pool's stale shares are only about %1-2.

So, what would you suggest and why?

Deepbit is one of the most reliable pools out there.  But I would strongly recommend a Stratum based pool moving forward.  So Ozcoin and BTC Guild would be good choices as they both are very well maintained, have several servers around the world and have multiple payout methods to choose from in case you get bored with one.

So use all three pools and have a long failover list with a Bitcoin client in server mode at the end of the list.

I started on Deepbit, but I've been on OzCoin for quite a while now. They've got PPS, DGM, or PoT (I still prefer DGM). I've been using their Stratum servers since they announced it, and it's been great (like 0.1% stales). They got multiple physical servers in several locations for backup failover. Graet is just plain awesome, as well.
