Question 1.) I'm in Canada - and i'd like to use a giftcard to purchase the funds to gamble - which GiftCard should i buy to make my purchase? - as I don't have a bank account I can use for this.

Not with the gift cards but here are some of your options:

A) Refer here: https://www.buybitcoinworldwide.com/canada/

Choose those options without the need for bank accounts. Basically you will pay with cash on those designated payment centers. Although you need to undergo KYC it's for your own advantage and the next time you will buy BTC, its now one-click.

B) If you are not comfortable with KYC, try to search for BTC sellers on your locals: https://bitcointalksearch.org/topic/canada-183337

C) You can also consider having a P2P exchange within the community on the Currency Exchange section and there might be willing to do transact with you without any hassle. USE ESCROW!

Question 3.) OK - so i've got a Canadian GC - i've bought some crypto. Which Casino should I go to? I'm looking at CryptoSlots - but open to opinion!

Aside from those - any other tips? I'm mostly looking to play slots or blackjack.

Most of the casinos you will find here with an active community are all good. It's now up to your own preferences. So yes, there might be a chance that you need to play at each sites before there will be a site that will pass your criteria.

Regarding casinos, there are 50+ casinos out there in the crypto space and most of them offer Blackjack and Slots so it depends on which user interface you like to play and my suggestion would try playing the EOS or Tron based casinos which offer faster on-chain bets when compared to others like BetHash, HashPro, Wink, Earnbet, EOS Play, etc where all of them are operating for more than a year but they may be relatively small when compared to other big casinos in this space but all of them offers on-chain betting. For new users understanding the EOS and Tron might be a little difficult but it's worth knowing it. I'm using these casinos personally for more than a year.

I dont know whats your main motivation for gambling but if it is "to have some fun and excitement every now and then" you should maybe consider casinos which offer faucets (or something comparable).
A lot of gambling sites credit you with a minor amount of coins often not worth even a single dollar-cent for completing simple tasks (a bomb game at Windice for example) or logging in on a daily basis. Additionally, there are often giveaways (chatrains, telegram-chats, ...) which you can collect, too. The amount of coins you gather are definitly not worth that much but it is enough to try out the games and play every now and then.

In addition to these sites, I would also recommend sites like Stake, Wolf.bet, Mintdice, Luckyb.it etc. Plenty of options available to choose from.

Do your research first. If the site CAN do kyc, expect them to do so.
Almost every casino site can ask for KYC if they suspect shady behavior and this is clearly stated in their T&C though this does mean that they enforce KYC on every single customer. This would screw their business. They only enforce it under certain conditions based on my experience with them.

Another thing for gamblers if you are very resistant to KYC,,, then it is not just the point you buy bitcoin but at the point you gamble and withdraw. Too many complaints come from people who do not or cannot get kyc verified after playing.

In 6 years as crypto-gambler I have never used a casino that requieres kyc.

Leading Crypto Sports Betting & Casino Platform
In Canada you have it so easy with gift cards. You can just walk into a grocery store and chances are they will be selling a prepaid card loaded with dollars like "Vanilla" prepaid Visa cards. This could be used to buy whatever in turn.

But I wouldn't recommend to buy a card in order to get crypto. Better just spend your cash directly after finding some local seller in a platform like local bitcoins.

It depends on you on what casino you want to play or which casino suits your taste but one thing about casinos that you should use to play must be a legit, reputed and popular ones. I'm sure there are casinos like that and just choose which one suits you best. Try to check one of this gambling site provided by ralle14 in this thread

If you don't want to go the KYC route where you need to provide your proof of residency and passport then you should just go to a bitcoin ATM and buy the bitcoins with cash. They got a large spread, usually 10% or so but its good for small transactions.

Download some wallet on your phone like Blockchain wallet and its where your BTC will be sent. Once its sent there you can send it to an exchange and buy your Litecoin or Dogecoin with it. If you want to keep using BTC then just send it to the various casinos that are reviewed on bitcointalk.

If you want to sell your BTC when you are done gambling then its more involved, because many ATMs only let you buy and not sell. You would need to either find one that lets you sell for fiat or find someone on localbitcoins. However last I heard, that requires KYC now.

Aren't you open to play dice as well? we have many sites that you can try to play with dice if you want to just like bustadice but if you are for the slots. Actually, you can simply lurk in this section and try them with their minimum deposits.

Fortunejack has slots and mintdice too but can you be specific what crypto you have right now?

You can buy Amazon giftcards, then purchase Bitcoin using localbitcoins.com.

As far as I'm aware, this is basically the only way you can get Bitcoin by spending giftcards. You should expect to lose around 10% with this method though, so it's not ideal.

Why are you looking to buy in using giftcards? For anonymity? If that's the issue, simply buy BTC or Monero for cash using one of the huge number of OTC groups.

Litecoin is the lowest transaction fee, and commonly supported by most casinos, but I believe Dogecoin is almost similarly low.

In any case, I recommend you check out Luckydice if you're into dice games, or NitrogenSports if you like sports betting.
