Just so you know, it is usually best to have any collateral for a loan secured prior to funding the loan, not after.

Also I don't think people should care how exactly you store your customers' funds as if they are somehow lost then you should cover the losses with your own funds.
Yes don't make my same 'mistake' set a limit max of the bitcoin for your escrow service and open your eyes there are a lot of scammers and dishonest person that want to 'screw' you.

PS. Configure your GPG not to use SHA1 while hashing - SHA1 is known to be weak, and SHA2 (SHA256 and SHA512) is better than SHA1.
