I'm not sure if the 1v1 system (heads up) still exists today since we all know that today's Poker is way better with more players involved (min. 4 players up).
In the past (or IIRC there are still using it nowadays), creating a private room is one of the most used ways. For how to make that room, I forgot those sites who have that feature. I even saw a private room just this year in a Facebook group chat via Messenger but I don't know how's the system there works.

Include a Chinese Poker (pusoy).
