It's rather simple.

First one is 1
How many 1's are there? There is one 1 so it would be 11
Based on that 11, how many 1's are there? There are 2 ones so it would be 21  
Based on that 21, How many 2's and 1's are there? There are 1 two and 1 one so it would be 1211
Based on that 1211, How many 1's and 2's are there? It would be 1 one, then 1 two, THEN 2 ones so it would be 111221
