I already mine Ether, but I was wondering about mining other coins, too.

I suspect that my setup can, essentially, walk and chew gum, at the same time.

So, generally, won't it be more profitable, for my rig to mine more than one coin?

Any thoughts, on this issue?

Are you talking about double mining? 2 in 1 kinda mining? It's not worth it anymore, you will be stressing your cards too much and wasting too many electricity, you should continue mining ethereum or switch to other Algorithm like Monero (RandomX)

Calculate it.
If there's still enough hash power for you to mine other coins, why not? But, if you have been mining Ethereum and you still receive profit less the mining expenses, I think that's already enough.
