The best exchange site for me is localbitcoins and btc-e. I like btc-e because they don't need your docs and other confidential infos.

Keep in mind any exchange can close at any time and steal all your coins.  It's happened many times already.

Only keep coins in the exchange long enough to convert them, then withdraw,

Well said. We have all seen what happen when a big exchange has problem with customers' bitcoins.
When keeping your coins in exchanges, you don't have the private keys and so you won't be able to get any of your bitcoin back when the exchanges disappear and have problems.

There are a lot of bitcoin exchanges. bitstamp, btc-e, bitfinex, kraken, coinbase, circle, ANX, localbitcoins, etc.
Btc-e is old and has been working well, though the background of the company and its owners are pretty much unknown.

Keep in mind any exchange can close at any time and steal all your coins.  It's happened many times already.

Only keep coins in the exchange long enough to convert them, then withdraw,

Cryptsy has been perfect for me since more than a year. They are one of the oldest altcoins exchange (with BTC-e), and they had few scandals when compared to other exchanges. Plus the fees are lower than BTC-e, and they are a registered US company.

I'd suggest you to try them.
