For simple reasons because it's network is too congested from different kind of transactions e.g. spam tokens, ico tokens, smart contracts, nft, and too many more to mention.
It's always frustrating but you need to move on and use other alternative networks if available.

As per my experienced, even if the network of ETH is not congested, the fees is still high. And with the new NFT hype in the last couple of months, it contributed to the network now always congested that's why the fees are exorbitant for us traders.
So yeah, it's a bit frustrating and the only thing we can do is to used other networks and swap to others like BSC which is much more cheaper.
