Rollercoaster Tycoon! I used to play that game as a child and it was sooo captivating. I spent hours after school designing new parks, over and over again. Does anyone remember the Dynamite Dunes campaign from the first game? Used to watch Star Trek while building that park...
My all time favorite is Counter Strike. I was addicted playing it for many years. 
Got the new UFC game for XBOX ONE the other day, really good graphics and fun, if you like watching the UFC you will love this game.
Final fantasy series, too bad 14 have monthly fees.

Age of Empires 2 is timeless. I could go back to that game tonight and still feel as immersed as I did the very first time.
Not AoE, not AoE III, but AoE II is where it's at. I used to enjoy playing on the MSN Gaming Zone as it was back in the day.
