I've had at least 2 accepted blocks as shown on cgminer but no coins being deposited into my wallet after at least 20 minutes. From past solo attempts, I remember coins from accepted blocks being deposited almost instantaneously into wallets!
Any ideas what's happening here?

Orphans, I had the same question a while ago. Orphans will show under transaction number but won't show up in your wallet. Means someone else found the solutions quicker.

So looks like re-target is set to 4x max. It'll be a while for the network to stabilize

Doesn't make a difference, shitcoin being insta-mined, you're going to get 75% rejects.
We didnt want to do difficulty on adjustments on every block because of the multipool / pool hopping to most profitable coin problems associated with those difficulty adjustments. If you don't like the coin, don't be part of it. This is for FUN anyway - read what the coin is about before you troll?
Having a long difficulty adjustment just makes the pool hopping problem worse though. When the difficulty is low, someone can jump in and insta-mine a lot of blocks before the difficulty catches up (which is what is happening right now). Then when the difficulty finally does catch up and some of the miners leave, you are stuck at a high difficulty with long block confirmations (e.g. 1 hour+ per block, and it takes 2016 blocks to retarget). Catcoin had this exact problem and they had to do a hardfork to fix the difficulty.
yeah not only catcoin but a lot of coins. the best way is to have a closer re-target difficulty and also ovoid exchanges until there is a huge demand. huge demand. and a lot of dedicated miners.
don't let it die like the other coins. Once it hits an exchange and there is value to this coin. all the farm-multipools will jump in this and pump and dump it till the value of it its stable at $12/day
