Is it going to be something like fiverr? where freelancers can create fixed packages like gigs, OR is it going to be something like upwork where freelancers need to send proposals to buy?
I look forward to it as I am working as a freelancer on fiverr but the problem I am facing there is they have 20% fee and they dont pay freelancers in cryptocurrencies neither do they accept from buyers.

Another reason which I have personally experienced is, sometimes customer don't know what they want until you tell them, that's where gigs play the role.
