As far as I can see - most the sites out there are just using blockchain technology as a legit vehicle to 'crowdfund' a project that does not exist in any way shape or form.

well it depends on what you mean because blockchain based services and products are already in used by millions of users, example are binance exchange, coinex, bitcointalk.org, to mean a few are already been used massively.

There are MANY large scale applications of it in use.

Like that payment API, wallets, ICO projects, mining, trading and many things involved in blockchain based products so far being used in the forum mate.
Those services are used only for blockchain related things such as transactions or storing coins. That isn't what we define as a practical use in the industry. A real use case would be blockchain used in the medical sector to prevent distributing fake medicines.

Assumingly more and more companies are considering implementing blockchain in their business as a way to solve some re-occurring issues that harm operations. The technology itself has the power to influence quite some daily operations and make them somehow more secure and reliable.

i think etherum is already in use to create smart contracts. Bitcoin is also in use in different parts of the world as a means of payment in replacement of fiat.

I guess what you see on cryptocurrency market by now just like coins/tokens and exchanges are the product of blockchains that are being used already. Blockchain has been generic that you can't see it is its product. We should be thankful by blockchain invention.
