You can open more than one wallet for sure and it is rather just a interface to make interaction with the ethereum blockchain easy and secure.
Yeah make as many as you want. i have one for each different token to minimize loss if i get hacked. And watch out for fake myetherwallet sites with 1 letter spelt differently, there is a lot of those around trying to get you to enter your private key on there cloned site so they can steal all your coins.
Yes, you can have multiple myetherwallets. It is a web-based wallet.So no need to worry about it much.
