I am sure as a casino they would handle what they need for the bankroll of the casino before they could ever allow people to gamble that way. There is no way in hell that a casino this professional would just leave the max bet empty and just allow people to gamble whatever they want and in case they win too big they would be "we don't have that much money". That is not going to happen and it would be unthinkable to imagine a casino can't see that before it happens.
They probably have enough money to cover that 10 times over if they allowed such a big win, usually casinos allow between 1% to 10% of the bankroll to be won in one sitting, obviously they could dynamically change it when something major happens but they would be ready when it happens, just change it later on.

Right, Chips has more than enough in the bankroll to survive these wins. That's why people should only play at licensed casinos. Proof of funds is one of the major requirements to get a license.
