Chinese dishes are the one thing I'm horrible at. I just can't seem to duplicate the style or taste It always comes out a mess. I do love Chinese though.

I can't cook much beyond boiling an egg myself - but fundamentally Chinese about basics like "oil and garlic" and the correct preparation (a lot of chopping up of ingredients which is why "mapo doufu" might be an easier starting point).

Certainly "wok" cooking is not very difficult (and is very quick).

Also note that traditional "mapo doufu" includes Sichuan "wild peppers" which *literally make your lips and tongue numb* (so you may have to decide whether or not you want to include those as a lot of westerners don't like that).

Although I can't eat spicy food now when I did one of my favourites was "mapo doufu" (a very popular Sichuan traditional Chinese dish).

It is basically minced meat (normally pork) and tofu with a bunch of red hot chilly peppers!

Easily cooked in a wok and no difficult preparation.

Where are all the responses?

I guess you need a "chick" on here after all. Wink

Since I do most of the cooking, I have a few recipes but I actually don't cook anything that spicy or use tomatoes, except in spaghetti, lasagna or on salads.

I make an oven baked chicken most people like.  It requires skinless chicken breast, first dipped in butter (real butter is best), then dipped in a breading made with about 2/3 cracker crumbs or panko bread crumbs or crushed corn flakes mixed with 1/3 parmesan cheese.  With the oven set at 375 I bake them for about 40 minutes or so, until the tops are golden brown.   You could probably add some hot sauce before you dip the chicken in butter for a little more "kick".  I have never tried it, but who knows, it might be good.
